First there is a phone call, in which you are asked about previous experience, how you would handle certain situations and then in person interview, in which you are mainly trained, for a few hours with other people also applying.

I got a call from the assistant manager and she did me some questions about my experience and my availability, after that she invited me at the assessment day. There wasn't hard, they told us about the company and the different events that they run at the city and arround. Finally they tested our skills as wine waiters.
